Ingredients (Serves 2)
- 100g Carrot (washed and prepared)
- 100g Rolled Oats
- 130ml Vegan Milk (Almond, Soy, or Oat milk)
- 2 Eggs
- 1 handful Nuts (cashews, almonds, etc., to taste)
- 1g Salt
- 2g Cinnamon Powder
- 3g Baking Soda
- A little Cooking Oil (for greasing the pan)
Cooking Instructions
Step 1
First, prepare all the necessary ingredients. The moisture content of your oat cake can vary depending on the type of vegan milk used, so choose your favorite almond milk, soy milk, or oat drink!
Step 2
Wash, peel, and finely chop or grate the carrot. Chop the nuts into bite-sized pieces. Prepare 2 eggs. Place the rolled oats in the vegan milk and let them soak for about 15 minutes to soften.
Step 3
Measure out the dry ingredients: salt, cinnamon powder, and baking soda. For precise baking, using a kitchen scale is recommended. Prepare them in the order of 1g salt, 2g cinnamon powder, and 3g baking soda.
Step 4
Combine 100g of rolled oats with 130ml of unsweetened almond milk. Stir well and let it soak at room temperature for about 15 minutes until the oats are tender and plump.
Step 5
Now it’s time to mix all the ingredients together. Get a large bowl and add the soaked oats, prepared carrots, chopped nuts, eggs, and the measured salt, cinnamon powder, and baking soda. Stir the mixture gently until well combined, ensuring the salt dissolves.
*Tip: Grating the carrots will result in a smoother cake texture, while finely chopping them will give a slightly coarser, more rustic texture. Choose according to your preference!
Step 6
Lightly grease the inner pot of your electric rice cooker with cooking oil. This step is crucial for preventing the cake from sticking and ensuring it releases smoothly after baking, keeping its shape intact.
Step 7
Pour the batter into the greased rice cooker pot. Now, use the ‘Steam’ or ‘Cake’ function on your rice cooker. Set it to cook for approximately 20 minutes, then repeat for a second cycle, totaling about 40 minutes. Depending on your rice cooker model, you might need to adjust the cooking time slightly, so check for doneness.
Step 8
Once cooking is complete, carefully turn the rice cooker upside down and remove the inner pot. Your delicious Carrot Oat Cake should slide out perfectly! It will be moist on the outside, fragrant and nutty on the inside, and pleasantly not too sweet, offering a wonderfully wholesome flavor.
Step 9
While it’s delicious served warm, for a firmer and chewier texture, let the cake cool slightly, then refrigerate it for a few hours before enjoying. Enjoy your healthy and delightful homemade cake!
