Beat the Heat! Easy Homemade Cold Noodles with Young Cabbage & Radish Kimchi
Leveraging the refreshing young cabbage and radish water kimchi I made earlier, I’ve created a wonderfully simple and delicious cold noodle soup (mul naengmyeon). It’s perfect for revitalizing your appetite on a hot day.
Main Ingredients
- 1 serving of Naengmyeon noodles (approx. 220g)
- 1 small packet of store-bought Naengmyeon broth
- Young Cabbage & Radish Water Kimchi (broth and solids) as needed

Cooking Instructions
Step 1
First, combine the store-bought naengmyeon broth with a generous amount of your pre-made young cabbage and radish water kimchi. (For the water kimchi recipe, please refer to [Recipe ID: @6958452].)
Step 2
Depending on the saltiness of your water kimchi, the final broth might be too salty. If so, add some ice cubes or cold water to adjust the taste. It’s crucial to get the broth cold first. Prepare the broth before cooking the noodles.
Step 3
Prepare your Hamheung-style naengmyeon noodles. If they are clumped together, gently rub them with your hands to separate. Then, carefully add them to a pot of rapidly boiling water and cook for just about 30 seconds. Be careful not to overcook, as they can become mushy.
Step 4
Immediately drain the cooked noodles and immerse them in a bowl of ice-cold water. Rub the noodles vigorously while rinsing them under the cold running water. This thorough rinsing removes excess starch, preventing the noodles from sticking together and ensuring a wonderfully chewy texture. Rinse them 1-2 more times in cold water.
Step 5
Drain the rinsed noodles well, squeezing out excess water. Arrange the chewy Hamheung-style naengmyeon noodles in a serving bowl. Pour the chilled young cabbage and radish kimchi broth over the noodles. Your delicious cold noodle soup is now ready!

As the weather warms up, my son (who has a picky, kid-like palate) starts craving cold noodles. This is his absolute favorite! Even if he’s not keen on other vegetables, he devours this mul naengmyeon made with water kimchi in no time. It’s a guaranteed hit! (Tip: Even picky eaters enjoy this dish.)
