Cooking Instructions
Step 1
For the best Yukhoe, fresh beef is essential! Visit your local butcher and inquire about their ‘butchering day.’ This way, you can easily and affordably purchase the freshest meat on the day you want to make it. Using meat that was butchered the same day will significantly enhance the flavor of your Yukhoe.
Step 2
Let’s start by making the seasoning sauce that will determine the exquisite taste of your Yukhoe. Combine all the sauce ingredients (soy sauce, sugar, salt, sesame oil, minced garlic, chopped green onion, plum extract) in a bowl. The key to a clean-tasting sauce is to stir until the sugar and salt are completely dissolved.
Step 3
Sweet and crisp pear is a crucial ingredient that adds to the Yukhoe’s flavor profile. Thinly julienne half a pear into approximately 0.4cm thick strips. Arrange the julienned pear neatly on a serving plate. If you like, you can also mix in thinly sliced fresh chestnut for a different twist.
Step 4
It’s important to remove any gamey smell from the beef and maintain its freshness. Gently press the beef for Yukhoe with paper towels to absorb excess blood. If you are not consuming the beef immediately after purchase, line an airtight container with about two layers of paper towels, place the blotted beef inside, and refrigerate. When ready to serve, take it out and mix it immediately for the best taste.
Step 5
Place the blotted beef in a mixing bowl. Gradually add the prepared seasoning sauce, about one tablespoon at a time, and gently mix with your fingertips, being careful not to warm the meat with the heat from your hands. Don’t pour all the sauce at once; add it gradually to adjust the seasoning to your preference. I used a little over 2 tablespoons. Mix gently to preserve the meat’s juices.
Step 6
Yukhoe’s flavor diminishes significantly if made ahead of time, so be sure to mix and serve it just before eating for ultimate freshness. If you have any leftover seasoning sauce, you can serve it separately with rice for a delicious, instant Yukhoe Bibimbap. Enjoy this special treat!
Step 7
Isn’t it simple? If you stick to this golden seasoning sauce ratio, you are guaranteed to make delicious Yukhoe every time! This dish looks incredibly elegant when served at birthday parties or for special guests. Enjoy Yukhoe on a special day with your loved ones!
