For the Yukhoe

  • 200g Beef sirloin (or other lean cut suitable for tartare), thinly sliced
  • 1/4 Pear, peeled, cored, and julienned
  • 1 slice Cheese, cut into thin strips (optional)
  • 1 Egg yolk

For the Yukhoe Sauce

  • 1.5 Tbsp Sugar
  • 2 Tbsp Soy sauce
  • Plenty of toasted sesame seeds
  • 2 Tbsp Sesame oil
  • 1 Tbsp Minced garlic
  • A small amount of chopped green onion (white parts preferred)
  • A pinch of MSG (optional, for enhanced flavor)

Cooking Instructions

Step 1

Start by preparing the beef. Use paper towels to gently pat and remove any excess moisture or blood from the thinly sliced beef. This step is crucial for a clean taste. Place the prepared beef in a large mixing bowl.

Step 1

Step 2

Now, let’s make the delicious Yukhoe sauce! In a separate small bowl, combine all the sauce ingredients: sugar, soy sauce, sesame seeds, sesame oil, minced garlic, chopped green onion, and MSG (if using). Mix them well. Pour this sauce over the beef in the large bowl. Put on disposable gloves and gently mix the beef and sauce together. Be careful not to overmix, as this can make the meat tough. A gentle toss is key.

Step 2

Step 3

Adding the white parts of the chopped green onion at this stage will provide a refreshing, slightly pungent flavor that complements the richness of the beef. It adds another layer of aromatic complexity.

Step 3

Step 4

Finally, sprinkle generously with toasted sesame seeds for a nutty aroma and mix one last time. Your delicious soy-sauce-based Yukhoe is ready!

Step 4

Step 5

Prepare the pear by peeling, coring, and cutting it into thin matchsticks, similar in size to the beef. The crisp pear will cut through the richness of the beef, adding a refreshing crunch.

Step 5

Step 6

Arrange the seasoned Yukhoe beautifully on a serving plate. Create a small well in the center and carefully place the egg yolk there. If you enjoy it, break the yolk and mix it with the beef for an even creamier texture. If you’re not a fan of raw egg yolk or have allergies, feel free to omit it. You can also add strips of cheese for a different twist!
