Yukhoe-style Seasoned Beef with Fish Sauce
(Beef Cattle Cooking Competition) Huns’ Yukhoe Seasoned with Fish Sauce
This recipe was born from the thought of how to enjoy yukhoe (Korean raw beef) as a side dish. Building on the basic concept of mixing yukhoe with egg yolk, I came up with this seasoned beef dish using fish sauce. It offers a unique flavor by combining the chewy texture of raw beef with a savory, sweet, and salty sauce.
Main Ingredients- 100g of prime beef sirloin (top-grade cut, suitable for yukhoe)
Curing Solution- 500ml water
- 2 Tbsp salt
- 2 Tbsp sugar
Fish Sauce Dressing- 1 tsp kelp broth (or plain water)
- 1 tsp anchovy fish sauce
- 1/3 tsp sugar (adjust to taste)
- 1/2 tsp citron preserve (for a fragrant and refreshing note)
Aromatics and Garnish- 1/2 red chili pepper (seeds removed, finely chopped)
- 1/3 Korean green chili pepper (add more for extra spice, seeds removed, finely chopped)
- 3 cloves garlic (thinly sliced)
- 1 stalk green onion (chopped)
- 1 tsp sesame oil (for nutty aroma)
- 500ml water

- 2 Tbsp sugar

Cooking Instructions
Step 1
First, prepare the curing solution. In a pot, combine 500ml of water, 2 tablespoons of salt, and 2 tablespoons of sugar. Stir until the salt is dissolved and bring to a boil. Let it cool completely. Then, immerse the 100g of sirloin beef in the cooled solution and cure for about 2 hours. This step firms up the meat and removes any gamey odor. After curing, lightly rinse the beef under cold water and thoroughly pat it dry with paper towels. Slice the beef into very thin strands, ensuring they don’t clump together.
Step 2
Next, prepare the flavoring ingredients. Finely chop the red chili pepper and Korean green chili pepper after removing their seeds. Thinly slice the garlic. Now, let’s make the fish sauce dressing. In a small bowl, mix 1 teaspoon of kelp broth (or plain water) with 1 teaspoon of anchovy fish sauce, 1/3 teaspoon of sugar, and 1/2 teaspoon of citron preserve. For a more refreshing taste, reduce the sugar and increase the citron preserve.
Step 3
Combine the sliced beef with the prepared fish sauce dressing, chopped chili peppers, sliced garlic, and chopped green onions. Finally, drizzle with 1 teaspoon of sesame oil for a nutty flavor. Gently toss all the ingredients together until the beef is evenly coated with the dressing. Be careful not to overmix, as this can break down the delicate texture of the beef. The seasoned beef is now ready to be enjoyed immediately or chilled for a refreshing taste. It makes a delightful meal served over rice as a beef bowl or as a side with fresh lettuce wraps.
