To compensate for the mildness of less-fermented skate, I’ve incorporated lemon juice for a bright tanginess and mustard for a subtle kick. If you’re new to skate, this ‘muchim’ (salad) style is a perfect introduction, offering a chewy texture that’s surprisingly similar to dried pollack but with a more satisfying bite.   • 1/3 bunch water parsley (approx. 50g)
  • 1 tsp gochujang (Korean chili paste)
  • 1 tsp Korean mustard
  • 1 tsp minced garlic
  • 1 tsp gochugaru (Korean chili flakes)
  • 2 Tbsp lemon juice
  • 1 Tbsp plum extract (maesil-cheong)

Start by adding fresh water parsley to your purchased skate sashimi salad, or to the skate you’ve prepared. This adds a wonderful fresh aroma. Wash the water parsley thoroughly and cut it into about 3-4 cm lengths.

If your skate sashimi is sparse or you desire a more substantial texture, consider adding boiled squid. Boil the squid briefly until tender and slightly chewy, then slice it into bite-sized pieces. This addition creates a delightful skate and squid salad, a true seafood delight!

Now, let’s prepare the flavorful dressing. In a bowl, combine 1 tsp gochujang, 1 tsp Korean mustard, 1 tsp minced garlic, 1 tsp gochugaru, 2 Tbsp fresh lemon juice, and 1 Tbsp plum extract. Mix these ingredients well. If the skate itself lacks its characteristic pungent kick, feel free to add a little more mustard to enhance the flavor.
