  • Unsalted butter 60g (at room temperature)
  • High-quality matcha powder 10g
  • 1 Egg yolk
  • Salt 1/8 tsp
  • Granulated sugar for coating, a small amount
  • Egg white for coating, a small amount

In a bowl, place the softened butter. Using a hand mixer on the lowest speed (speed 1), whip for about 30 seconds until it becomes smooth and creamy. It’s important to cream the butter well so there are no lumps.

Add the sifted powdered sugar and salt in two additions. Mix with the hand mixer on speed 1 until smooth and well combined. Be careful not to overmix, as this can make the cookies tough.

Add the egg yolk and mix with the hand mixer on speed 1 for about 30 seconds. Then, increase the speed to 2 and whip until the mixture turns a pale creamy color. Ensure the butter and yolk don’t separate during this step.

Add the sifted cake flour and matcha powder to the bowl. Gently fold them in with a spatula until just combined and no dry flour streaks remain. Avoid overmixing to prevent developing gluten, which can result in chewy cookies.
