For the Mandarin Jam
  • 600g fresh tangerines (peeled)
  • 200g granulated sugar
  • 1 Tbsp lemon juice (for brightness)

Cooking Instructions

Step 1

Let’s start by making delicious tangerine jam! Wash the tangerines thoroughly, peel them, and then blend them until smooth in a blender. If you don’t have a blender, you can also grate them finely. Transfer the blended tangerines to a pot, add the prepared sugar and lemon juice. It’s best to cook this over medium-low heat rather than high heat to prevent burning and ensure a delicious jam. Skim off any foam that rises to the surface while cooking for a cleaner flavor. Continuously stir with a wooden spoon or spatula to prevent sticking to the bottom of the pot.

Step 2

The jam is ready when it thickens to a desirable consistency. It should slowly drip off the spoon. Once done, transfer the hot jam into sterilized glass jars for storage. Refrigerate for the freshest taste.

Step 3

Now, it’s time to assemble the Mandarin Jam Pie! Trim the crusts off the bread slices using a knife. Then, use a rolling pin to flatten each slice of bread as thinly as possible. The thinner the bread, the crispier and tastier your pie will be. Rolling it out thoroughly is key.

Step 4

Cut the flattened bread slices into manageable pieces. Cutting them into 4 pieces will give you a total of 8 slices, perfect for little hands to hold.

Step 5

On eight of the bread slices, gently press down in the center to create a slight indentation. This will help hold the jam and prevent it from spilling out. You can use a bottle cap to press down firmly, creating a nice circular well. If you have a piping tip, you can also use it to create decorative shapes.

Step 6

Spread a generous amount of your warm, homemade tangerine jam onto the remaining eight bread slices. Then, carefully place the bread slices with the indentations on top of the jam-covered slices, like making a sandwich. Ensure they are sealed well.

Step 7

Time to bake your pies in the air fryer! Preheat your air fryer to 160°C (320°F) and bake the pies for about 5 minutes. They should come out golden brown and wonderfully crispy on the outside, with warm, gooey jam inside. Keep an eye on them to prevent burning!
