Muffin Batter Ingredients- 220g cake flour
- 2 large eggs (room temperature)
- 6g baking powder
- A handful of chocolate chips (for orange chocolate chip muffins)

- 125g fresh orange juice (from approx. 3-4 oranges)

Cooking Instructions
Step 1
Start by thoroughly washing your fresh oranges. Peel them, remove any seeds, and then extract approximately 125g of fresh orange juice using a juicer or blender. Set this aside, as the vibrant citrus aroma will be key to the muffins’ delicious flavor.
Step 2
In a mixing bowl, cream the softened, room-temperature butter until it’s smooth and fluffy. Add the granulated sugar and salt, and mix well until the sugar is dissolved. Whisk in the well-beaten eggs gradually, adding them in 2-3 additions while whisking continuously to ensure the mixture doesn’t separate. Proper emulsification is crucial for a smooth batter.
Step 3
To further stabilize the batter and prevent separation after adding eggs, you can gently whisk it over a double boiler (a bowl set over simmering water, maintaining a temperature of about 38-40°C or 100-104°F). In a separate bowl, sift together the cake flour and baking powder, which you’ve prepared beforehand. Add the sifted dry ingredients to the creamed butter mixture. Using a spatula, gently fold the ingredients together by making a ‘#’-like motion, mixing from the outside of the bowl inwards, just until no dry streaks of flour remain. Be careful not to overmix, as this can result in tough muffins.
Step 4
Pour in the freshly squeezed orange juice that you prepared earlier. Gently fold it into the batter with your spatula until everything is well combined. The addition of orange juice will make the muffins extra moist and fragrant.
Step 5
Transfer the finished batter into a piping bag. Line your muffin tin with paper liners and fill each cup about 70% full with the batter. For half of the batter, simply pipe it as is to create plain orange muffins. For the other half, gently fold in a generous amount of chocolate chips to make delicious orange chocolate chip muffins. Bake in a preheated oven at 180°C (350°F) for 25-30 minutes. A toothpick inserted into the center should come out clean when they are done. Baking time may vary depending on your oven.
