Main Ingredients- 500g carrots (approx. 2 large carrots)
- 1/2 tbsp salt (for wilting)
Flavorful Carrot Rapé Dressing- 3 tbsp olive oil
- 1.5 tbsp wholegrain mustard
- 1/2 tbsp sugar
- 1 tbsp lemon juice
- A pinch of black pepper (to taste)

Cooking Instructions
Step 1
Begin by thoroughly washing the carrots under running water to remove any soil, gently brushing off any dirt. Peel the carrots using a vegetable peeler and trim off both ends.
Step 2
Using a mandoline slicer or a sharp knife, julienne the peeled carrots into thin, matchstick-like strips. The thinner the strips, the better they will absorb the dressing and achieve a tender texture.
Step 3
Place the julienned carrots in a bowl and sprinkle them with 1/2 tablespoon of salt. Gently toss to coat the carrots evenly, ensuring not to break them. Let them sit for 10 minutes to allow the salt to draw out excess moisture, which helps maintain their crispness.
Step 4
After 10 minutes, discard any liquid released from the carrots. Do not rinse the carrots. Instead, use your hands (wearing gloves is recommended for ease) or a clean kitchen towel to firmly squeeze out as much moisture as possible from the julienned carrots. This step is crucial to prevent the dressing from becoming watery.
Step 5
To the squeezed carrots, add the dressing ingredients: 3 tablespoons of olive oil, 1.5 tablespoons of wholegrain mustard, 1/2 tablespoon of sugar, 1 tablespoon of lemon juice, and a pinch of freshly ground black pepper. Mix everything together gently with a spoon or spatula until well combined.
Step 6
Finally, wearing clean gloves, gently toss and mix the carrots with the dressing using your hands. Ensure the dressing is evenly distributed throughout the carrot strips. Your delicious carrot rapé is now ready! It can be enjoyed immediately, or chilled in the refrigerator for a more intense flavor.
