Main Ingredients- 1 zucchini (approx. 260g)
- 1/4 red bell pepper (approx. 25g)
Marinade Dressing- 2.5ml salt for pickling (approx. 1/2 tsp)
- 15ml olive oil (approx. 1 Tbsp)
- 7.5ml vinegar (approx. 1.5 tsp)
- 2.5ml sugar (approx. 1/2 tsp)
- 1.25ml minced garlic (approx. 1/4 tsp)
- 2 grinds of black pepper
- A little dried parsley (for garnish)
- 2.5ml salt for pickling (approx. 1/2 tsp)
- 15ml olive oil (approx. 1 Tbsp)
- 7.5ml vinegar (approx. 1.5 tsp)
- 2.5ml sugar (approx. 1/2 tsp)
- 1.25ml minced garlic (approx. 1/4 tsp)
- 2 grinds of black pepper
- A little dried parsley (for garnish)
Cooking Instructions
Step 1
First, dice the red bell pepper into small, bite-sized cubes. Slice the zucchini in half lengthwise, then cut each half again lengthwise, and finally slice them thinly to about 0.2 cm thickness. Place the sliced zucchini and bell pepper into a zip-top bag. Add the salt for pickling, then remove as much air as possible from the bag before sealing it tightly. Gently shake the bag to ensure the salt is evenly distributed.
Step 2
After about 10 minutes of salting, hold the bag with the opening facing downwards and gently press with your hands to squeeze out the moisture from the zucchini. Without removing the zucchini from the bag, add the prepared olive oil, vinegar, sugar, minced garlic, and black pepper. Reseal the bag and shake it well to combine the marinade ingredients with the vegetables.
Step 3
Finally, add the dried parsley and give the bag another gentle shake. Your delicious zucchini marinade is now ready! It’s a simple yet refreshing side dish that’s perfect for any occasion.
