Main Ingredients

  • 1.5 Zucchinis
  • 1 serving Somyeon (thin wheat noodles)
  • 1/4 stalk Green Onion
  • A little Perilla Oil

Seasoning Ingredients

  • 1/2 Tbsp Salt
  • 1/3 Tbsp Minced Garlic
  • 1 tsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, wash the zucchinis thoroughly and trim the bumpy skin slightly. Then, slice them diagonally and julienne them thinly. Slice the green onion diagonally as well.

Heat a pan and add a generous amount of perilla oil. Add the julienned zucchini and stir-fry over medium heat, being careful not to burn it. Once the zucchini becomes slightly translucent, add the sliced green onion and stir-fry together. Cook just until the green onion softens.

Once the zucchini and green onion are sautéed, add the seasoning ingredients: 1/2 Tbsp salt, 1/3 Tbsp minced garlic, and 1 tsp gochugaru. Stir-fry for another 1-2 minutes until the seasonings are well combined and coat the zucchini. This allows the flavors to meld.

Meanwhile, bring a large pot of water to a rolling boil. Add a pinch of salt to the boiling water. Add 1 serving of somyeon noodles and cook. Stir gently to prevent the noodles from sticking together. Cook according to package directions, or for about 3-4 minutes, until al dente. Immediately drain the cooked noodles and rinse them under cold water to remove excess starch, making them chewy and firm. Drain well.

Arrange the drained somyeon noodles in a serving bowl. Generously top with the sautéed zucchini mixture. Finally, drizzle with 1 Tbsp sesame oil and sprinkle with 1 Tbsp toasted sesame seeds for a fragrant and delicious finish. Your zucchini noodles are ready to enjoy!
