Croquette Ingredients- 1 Zucchini
- 300g Minced Pork
- 1/2 Onion
- 1 Green Onion (Scallion)
- 1 Egg
- 1 Tbsp Plums Extract (Maesilcheong)
- Vegetable Oil for frying (generous amount)
- 1/2 cup All-purpose Flour
- 1 cup Breadcrumbs
Pork Filling Seasoning- 1 Tbsp Minced Garlic
- 1 Tsp Grated Ginger
- 1 Tbsp Oyster Sauce
- Pinch of Salt
- Pinch of Black Pepper
- 1 Tbsp Cooking Wine (Mirin)

Cooking Instructions
Step 1
First, prepare all the ingredients for the recipe. Wash the zucchini thoroughly and pat it dry. Finely chop the onion and green onion.

In a bowl, combine the minced pork with 1 tablespoon of oyster sauce, 1 tablespoon of plum extract, 1 tablespoon of minced garlic, 1 teaspoon of grated ginger, a pinch of salt, and 1 tablespoon of cooking wine. Mix well by kneading the ingredients together to marinate the pork.

Add the finely chopped onion and green onion to the marinated minced pork. Knead and mix vigorously with your hands until the mixture becomes cohesive and slightly sticky. This helps the filling hold its shape when frying.

Wash the zucchini, trim off the ends, and slice it thinly into rounds, approximately 0.2mm thick. Slicing them very thinly ensures they cook through nicely and maintain a pleasant texture. In a separate bowl, beat the egg until well combined.
