Main Ingredients- Buckwheat noodles 90g
- 1 Hard-boiled egg
- 1/2 Cucumber
- 1-2 Fresh tomatoes
- A little chopped green onion
- A little sesame seeds
Special Dressing- 1.5 Tbsp Soy sauce
- 1.5 Tbsp Tsuyu (noodle soup base)
- 2 tsp Vinegar
- 2 tsp Maple syrup (or sugar)
- 2 tsp Sesame oil
- 1 tsp Mustard paste

Cooking Instructions
Step 1
Prepare the ingredients: 90g of buckwheat noodles, 1 hard-boiled egg, 1/2 cucumber, and 1-2 fresh tomatoes. Having the egg pre-boiled will save you time.
Step 2
Wash the cucumber, remove the seeds, and thinly julienne it. Slice the tomatoes thinly. Cut the hard-boiled egg in half or into rounds. Finely chop the green onions for garnish.
Step 3
Make the special dressing for a delicious flavor. In a small bowl, combine 1.5 Tbsp soy sauce, 1.5 Tbsp tsuyu, 2 tsp vinegar, 2 tsp maple syrup (adjust sweetness to your liking), 2 tsp sesame oil, and 1 tsp mustard paste. Whisk everything together until well combined.

Bring 1 liter of water to a boil in a pot. Add the buckwheat noodles and cook according to the package instructions (usually 3-4 minutes). Once cooked, rinse the noodles thoroughly under cold running water to remove excess starch and drain them completely. **Tip:** For extra crispiness and a refreshing chill, briefly soak the rinsed noodles in ice water before serving.

Arrange the drained buckwheat noodles attractively in a serving bowl. Top with the julienned cucumber, sliced tomatoes, and the prepared hard-boiled egg. Sprinkle with chopped green onions and sesame seeds for a beautiful garnish.
