Ingredients

  • Cabbage: about 1/4 head (cut into bite-sized pieces)
  • Tofu: 1/3 block (diced)
  • Chives (or Green Onions): a small bunch (cut into 3-4 cm lengths)
  • Minced Garlic: 1/3 Tbsp
  • Shrimp Paste Broth (for seasoning): 1 Tbsp (adjust to taste)
  • Water: 500ml (or vegetable broth)

Cooking Instructions

First, prepare a clear broth for a clean flavor. In a pot, add 500ml of water and a soup stock pack (containing ingredients like radish, onion, and white parts of green onions). Bring it to a rolling boil over high heat. (If you don’t have a stock pack, you can use plain water.)

Once the stock pack (or kelp pack) is removed, add the prepared cabbage to the pot and bring it back to a rolling boil over high heat. Let it simmer for about 5 minutes until the cabbage becomes tender.

When the cabbage is somewhat cooked, gently add the diced tofu. Stir carefully to avoid breaking the tofu, and simmer for another 2-3 minutes until the tofu is heated through.

Once the soup is simmering, add the minced garlic and the cut chives (or green onions). Finally, season the soup with shrimp paste broth. Shrimp paste broth adds a wonderful umami depth and helps season the soup perfectly. Taste and add more salt or shrimp paste if needed.
