Main Ingredients- 1 medium Sweet Potato
- 1/2 head Broccoli
- 2 Tbsp Butter
- 3 Tbsp All-purpose Flour
- 2 cups Milk (approx. 400ml)
- 1/2 cup Heavy Cream (approx. 100ml)
- 1 slice Cheddar Cheese
Cooking Instructions
Step 1
Wash the sweet potato thoroughly, place it in a steamer without peeling, and steam for about 20-25 minutes until very soft. It should be easily pierced with a fork. Once steamed, let it cool slightly before peeling.
Step 2
Thoroughly washing the broccoli is crucial. Soak it in water with a little vinegar for about 10 minutes, then rinse it well under running water. Ensure it’s clean to minimize any concerns about residual pesticides.
Step 3
Separate the thoroughly washed broccoli into florets. Bring a pot of water to a boil with a pinch of salt, then blanch the broccoli florets for about 1-2 minutes. Be careful not to overcook, as it can change the color and degrade nutrients.

In a blender, combine the blanched broccoli, steamed sweet potato, and 2 cups of milk. Blend until everything is smooth and pureed. For a silky soup texture, blending thoroughly is recommended.

Heat a deep pot or pan over medium-low heat. Add 2 tablespoons of butter and let it melt slowly. Be careful not to let the butter burn, melting it gently.
