Acorn Jelly Vegetable Pancake
Incredibly Soft and Delicious ‘Acorn Jelly Vegetable Pancake’ – Perfect with Makgeolli or Beer! ^^
I made this incredibly charming pancake using a generous amount of acorn jelly I received from my mother-in-law. It’s a delightful savory pancake that’s both visually appealing and wonderfully tasty.
Acorn Jelly Batter
- 380g Acorn Jelly
- 1 Egg
- 3 Tbsp Water
- 5 Tbsp Pancake Mix (heaping)
- Pinch of Black Pepper
Generous Toppings
- 2 Tbsp Green Onion (finely chopped)
- 4 Korean Perilla Leaves (thinly sliced)
- 2 Shiitake Mushrooms (thinly sliced)
- 60g Shrimp (peeled and deveined)
- 2 Tbsp Onion (minced)
- 2 Tbsp Carrot (minced)
- 1 Egg
- 1/3 tsp Salt
- Pinch of Black Pepper
- 2 Tbsp Green Onion (finely chopped)
- 4 Korean Perilla Leaves (thinly sliced)
- 2 Shiitake Mushrooms (thinly sliced)
- 60g Shrimp (peeled and deveined)
- 2 Tbsp Onion (minced)
- 2 Tbsp Carrot (minced)
- 1 Egg
- 1/3 tsp Salt
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, let’s prepare the acorn jelly batter. Have about 380g of acorn jelly ready.
Step 2
Place the acorn jelly in a bowl and crack in 1 egg.

Add 3 tablespoons of water. This will help adjust the consistency of the batter.

Add 5 heaping tablespoons of pancake mix. This will contribute to a crispy texture.

Add a pinch of black pepper and mash the acorn jelly until smooth using a fork or a mashing tool. It’s important to mash it thoroughly without any lumps.

Now, let’s prepare the delicious toppings. Take 4 Korean perilla leaves and slice them thinly.

Remove the stems from 2 shiitake mushrooms and slice them thinly.

Peel and devein 60g of shrimp. Make sure they are clean.

Finely mince 2 tablespoons of onion. This will add sweetness and flavor.

Add all the prepared topping ingredients (perilla leaves, shiitake mushrooms, shrimp, onion, carrot, green onion) to the whisked egg, sprinkle a pinch of pepper, and mix everything evenly. This helps the toppings adhere well and makes the pancake look beautiful.

Heat a pan over medium heat and add a generous amount of cooking oil. Ladle in the mashed acorn jelly batter and spread it thinly into a round shape. Making it uniformly round will look even better.
