Main Ingredients
- 1 bowl of warm rice
- 1 egg
- 1 sheet of nori seaweed (for triangle onigiri)

Soy-Braised Egg Marinade Ingredients
- 3 Tbsp soy sauce
- 1.5 Tbsp sugar
- 1 Tbsp mirin (rice wine)
- 3 cups of water
- 3 Tbsp soy sauce

Cooking Instructions
Step 1
First, let’s make the delicious soy-braised egg! In a pot, combine all the marinade ingredients (3 Tbsp soy sauce, 1.5 Tbsp sugar, 1 Tbsp mirin, 3 cups water). Bring to a boil over high heat, then reduce to medium-low and simmer for 2-3 minutes until the flavors meld together.
Step 2
While the marinade is simmering, hard-boil the egg. Peel the cooked egg and carefully place it into the warm soy marinade. Let it soak for 20 minutes to allow the delicious soy flavor to penetrate the egg.
Step 3
Now, it’s time to prepare the onigiri rice. In a bowl, add 1 bowl of warm rice, 1/4 tsp salt, and 1 tsp sesame oil. Gently mix with chopsticks or a spatula, ensuring not to mash the rice grains. Even mixing is key for great flavor.
Step 4
Slice the soy-braised egg lengthwise into 2 or 3 pieces, making them easy to fit inside the onigiri. This will ensure a beautiful presentation when assembled.

Take a portion of the seasoned rice and shape it into a triangle using your hands or an onigiri mold. Gently press the center to create a small indentation where the egg will go.

Carefully place the sliced soy-braised egg into the indentation in the rice. Then, cover about half of the egg with more rice, gently shaping it. Wrap the sides of the onigiri with the long, cut nori seaweed to form the triangle shape.
