  • 5 sheets of well-fermented aged kimchi (Mugeunji)
  • 10 stalks of chives
  • 1 bowl of warm cooked rice

Cooking Instructions

Step 1

First, rinse the seasoning off the aged kimchi under running water until it’s clean. Squeeze out as much moisture as possible. If the kimchi is too sour for your liking, you can add a pinch of sugar. In a bowl, gently mix the rinsed kimchi with 1 tablespoon of oligodang and 1 tablespoon of perilla oil. This process helps to mellow the sourness and enhance its savory flavor.

Step 2

In a separate bowl, combine the warm cooked rice with the finely chopped chives. Add 1 tablespoon of sesame oil and 1 teaspoon of toasted sesame seeds. Mix everything together thoroughly to season the rice evenly. You can substitute chives with other finely chopped vegetables if preferred. If the rice is too sticky, let it cool slightly before mixing.

Step 3

Using your hands, shape the seasoned rice into oval-like portions, similar to making rice balls. Press firmly to ensure they hold their shape, which will prevent the rolls from falling apart when you wrap them with kimchi. Using a spoon can help you form consistent shapes.

Step 4

Trim off the tough, thicker end of each aged kimchi sheet. Gently spread out the kimchi sheet and place a shaped rice ball on top. Carefully wrap the kimchi around the rice, tucking in the sides as you roll it up tightly to form a neat log. Be gentle to avoid tearing the kimchi.

Step 5
