Pork Belly Roast
  • Pork belly block 400g
  • Herb salt, to taste
  • Rosemary sprig 1

Garlic Ssamjang
  • Garlic 10 cloves, minced
  • Ssamjang (Korean soybean paste) 1 Tbsp
  • Perilla oil 2 Tbsp

Cooking Instructions

Step 1

First, season the pork belly block evenly on all sides with herb salt. After seasoning, wrap it tightly with plastic wrap and refrigerate for about 30 minutes to 1 hour. This resting period allows the flavors to meld and the meat to become more tender, ensuring a more delicious result.

Step 2

Line the bottom of your air fryer basket with the fresh rosemary sprig. This will infuse a subtle, fragrant aroma into the pork belly as it cooks. Place the seasoned pork belly on top of the rosemary. Set your air fryer to 180°C (350°F) and cook for 8 minutes. Then, carefully turn the pork belly and cook each of the remaining sides for 8 minutes as well. Rotating and cooking each side for 8 minutes, for a total of 4 times (32 minutes), ensures even browning and cooking.

Step 3

Voila! Your delicious air fryer pork belly roast is ready. The cooking process renders out excess fat, leaving the meat incredibly juicy and tender on the inside, while the skin becomes wonderfully crispy, especially if you have a cut with the rind. The rosemary adds a lovely aromatic touch that enhances the overall flavor.

Step 4

While the pork belly is roasting, let’s quickly prepare the garlic ssamjang. In a small bowl, combine the minced garlic (about 10 cloves), 1 tablespoon of ssamjang, and 2 tablespoons of perilla oil. Mix everything together thoroughly until well combined. The pungent garlic and nutty perilla oil create a rich and flavorful dipping sauce.

Step 5

Finally, slice the perfectly roasted pork belly into bite-sized pieces and serve it with the freshly made garlic ssamjang. This combination makes for a truly impressive and satisfying dinner! Dip a piece of the crispy pork belly into the ssamjang and savor the explosion of flavors. Enjoy your special homemade feast!
