Create a special one-bowl dish bursting with the tangy and deep umami flavor of well-fermented Ba Kimchi. This Ba Kimchi fried rice is a simple yet satisfying meal perfect for any occasion.
Main Ingredients
- 1 instant rice cup
- 8 leaves of well-fermented Ba Kimchi
- 1/2 stalk of green onion
- 20g carrot
- 20g zucchini
- 2 Korean green chili peppers
- 15g red bell pepper
- A little cooking oil
Seasoning Ingredients
- 0.3 Tbsp Doenjang (soybean paste)
- 1 tsp brown sugar
- 1 Tbsp soy sauce
- 0.5 Tbsp sesame oil
- 0.5 Tbsp toasted sesame seeds
- A pinch of black pepper

Cooking Instructions
Step 1
First, wash and prepare all the ingredients for the fried rice.
Step 2
Gently shake off the excess filling from the well-fermented Ba Kimchi, then finely mince it. After mincing, squeeze out as much liquid as possible with both hands to ensure the fried rice isn’t soggy and turns out fluffy.
Step 3
Wash and finely mince the green onion, carrot, zucchini, red bell pepper, and Korean green chili peppers. Finely chopping the vegetables helps them meld well with the rice, creating a pleasant texture.
Step 4
Heat a pan over medium heat and add a little cooking oil. Sauté the minced green onion until fragrant, creating green onion oil. Then, add the minced Ba Kimchi, 0.3 Tbsp of Doenjang, and 1 tsp of brown sugar, and stir-fry them together.
Step 5
Continue to stir-fry for about 1 minute to mellow out the tanginess of the Ba Kimchi. This step removes any harsh sourness while retaining its savory flavor, enhancing the overall taste of the fried rice.
Step 6
Push the stir-fried Ba Kimchi to one side of the pan. Add a little more cooking oil to the empty space. Add the minced zucchini, carrot, bell pepper, and chili peppers, and stir-fry quickly for about 30 seconds until they are slightly tender. Then, add 1 instant rice cup.
Step 7
Mix the stir-fried Ba Kimchi and vegetables pushed to the side with the rice. Stir-fry everything together for about 3 minutes, ensuring the rice grains are separated and cooked through, becoming fluffy.
Step 8
While stir-frying the rice, pour 1 Tbsp of soy sauce around the edges of the pan. Allowing the soy sauce to lightly caramelize and slightly burn creates a smoky aroma that further elevates the flavor of the fried rice. Mix well with the rice.
Step 9
Turn off the heat. Add 0.5 Tbsp of sesame oil, 0.5 Tbsp of toasted sesame seeds, and a pinch of black pepper. Gently toss everything a few times to combine. Your delicious Ba Kimchi fried rice is now complete!
