Perfect for when you have a low appetite! Introducing a savory and mild mussel porridge recipe that can be quickly made with leftover cooked rice. The oceanic flavor and freshness of vegetables come together for a satisfying and delicious meal.
Ingredients
- Cooked rice (for 1-2 servings)
- 2 handfuls of prepared mussel meat
- 1/3 medium onion
- 1 handful of broccoli
- 1 handful of carrots
Seasoning & Broth
- Plenty of anchovy-kelp broth (approx. 3-4 cups)
- 1 Tbsp sesame oil
- Salt to taste
- Pepper to taste

Cooking Instructions
Step 1
First, rinse and thaw the 2 handfuls of mussel meat, which is the main ingredient of the porridge, and drain any excess water. Finely mince the onion, and finely chop the broccoli and carrots into roughly one handful each. Chopping the vegetables finely helps them blend well into the porridge and makes it easier to eat.
Step 2
Heat a pot with a generous amount of sesame oil (1 Tbsp). Add the minced onion and carrots and sauté. Lightly season with a pinch of salt to enhance the sweetness of the vegetables. Sauté over medium-low heat until the onions become translucent and are fully cooked.
Step 3
Once the onions are translucent and cooked, add the prepared mussel meat and sauté together. Stir for about 1-2 minutes until the savory flavor of the mussels melds with the vegetables. If the mussel pieces are large, you can chop them into smaller pieces to your preference for a smoother porridge texture.
Step 4
After sautéing the mussels with the vegetables, add about 3-4 cups of anchovy-kelp broth and all the leftover cooked rice. Bring to a rolling boil over high heat. Adjust the amount of broth according to the amount of rice and desired porridge consistency. This is key for the perfect texture.
Step 5
Once the porridge starts boiling, reduce the heat to medium-low. Add the chopped broccoli. It’s important to stir continuously with a spoon to prevent the rice grains from clumping and to ensure they cook down smoothly. Adding broccoli at the end helps preserve its color and adds a pleasant texture.
Step 6
When all ingredients are cooked through and the rice has softened to your liking, adjust the seasoning. Add salt as needed and a pinch of pepper to finish, according to your preference. Your simple and delicious mussel porridge is ready! It tastes best served warm.
