Introducing a delightful Crown Daisy and Tofu Salad, showcasing the fragrant essence of spring vegetables combined with the creamy texture of soft tofu. Seasoned minimally to highlight the slightly bitter notes of crown daisy and complemented by the mildness of tofu, this dish makes for a healthy and satisfying side that’s perfect for times when you need a little something extra.
Ingredients
- 1 bunch crown daisy (approx. 100g)
- 1/4 block firm tofu (approx. 70-80g)
Seasoning
- 1/2 Tbsp soybean paste (doenjang)
- 1/3 Tbsp toasted sesame seeds
- 1/3 Tbsp sesame oil
- 1/2 Tbsp soybean paste (doenjang)
- 1/3 Tbsp toasted sesame seeds
- 1/3 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare 1/4 block of tofu. Using the back of a fork or spoon, gently mash the tofu with the side of a knife until it becomes crumbly, similar to rice grains. Avoid large chunks for a smoother texture.
Step 2
Select fresh crown daisy and prepare it. Remove any wilted leaves or blemishes, and clean it thoroughly.
Step 3
Bring a pot of water to a boil. Add a pinch of salt to the boiling water. Submerge the tougher stem parts of the crown daisy first and blanch for about 10-15 seconds. Adding salt helps maintain the vibrant green color of the greens.
Step 4
Once the stems are slightly blanched, add the leafy parts and blanch them quickly for less than 10 seconds. Be careful not to overcook, as this can make the crown daisy mushy and lose its crispness.
Step 5
Immediately transfer the blanched crown daisy to cold water or rinse under running tap water to cool it down. This helps preserve its bright color and retain its crisp texture.
Step 6
Gently squeeze out excess water from the cooled crown daisy with your hands. Cut it into bite-sized pieces, about 3-4 cm long, and place it in a mixing bowl. Add the mashed tofu to the bowl as well.
Step 7
Add 1/2 Tbsp soybean paste, 1/3 Tbsp toasted sesame seeds, and 1/3 Tbsp sesame oil to the bowl with the crown daisy and tofu. Gently mix everything together with your hands until the seasoning is evenly distributed. Taste and adjust the soybean paste if needed, according to your preference. Serve the delicious Crown Daisy and Tofu Salad.
