First, thoroughly wash the fresh water parsley. Rinse it under running water, paying close attention to the stems and leaves, to remove any soil or debris. Blanch the washed parsley in boiling water for just a brief moment, about 10-15 seconds. This quick blanching helps retain its vibrant green color and crisp texture without making it mushy. Immediately after blanching, rinse it in cold water to stop the cooking process and cool it down. Gently squeeze out excess water before proceeding.

Step 2

Cut the blanched and drained water parsley into bite-sized pieces. Slice both the stems and leaves into manageable lengths, approximately 5-7 cm. This will ensure the dressing coats the parsley evenly and makes it easy to eat.

Now, let’s prepare the delicious dressing. In a large bowl, combine the cut water parsley with 1 tablespoon of gochujang, 3 tablespoons of vinegar, a pinch of sesame seeds, and 1/2 teaspoon of minced garlic.
