Cooking Instructions

Step 1

Before you begin cooking, please check each quail egg to ensure none are cracked or broken. We’ll be making a delicious braised dish with fresh ingredients.

Step 2

The white sinew in the pork tenderloin can be tough for babies with less developed chewing abilities. Removing it will result in a much more tender texture. You can remove it before or after boiling, but I chose to carefully trim it with a knife after it was fully cooked. Please pay attention to making it easy for your baby to eat.

Step 3

Dice the mushroom into bite-sized cubes. Using shiitake or king oyster mushrooms will add a wonderful depth of flavor to the dish.

Step 4

Since all ingredients need to be cooked thoroughly, it’s best to allow ample time for preparation. First, place the quail eggs in a pot and boil them over medium heat for at least 20 minutes. Boiling them sufficiently is key for easier peeling later.

Step 5

Boil the pork tenderloin for at least 20 minutes until very tender. Adding some green onion and onion slices, along with the cooking sake (mirin), during this boiling process will effectively remove any gamey smell from the pork. Do not discard the broth; it will be used as part of the braising sauce later, so set it aside.

Step 6

As the quail eggs and pork tenderloin boil, skim off any impurities or foam that rise to the surface of the pot. This step helps ensure a clear and clean broth for the braising sauce.

Step 7

Immediately after boiling, rinse the quail eggs under cold running water to cool them down. This cold shock and gentle friction will make peeling the shells significantly easier. Enjoy the fun of peeling the eggs while anticipating the plump results!

Step 8

Worried about peeling all 40 quail eggs? I timed myself, and it took about 10 minutes! A helpful tip: gently roll the eggs with their shells on across a flat surface. This helps create small cracks and loosens the shell, making it much easier to peel. Give it a try!

Step 9

Rinse the boiled pork tenderloin in cold water as well. This is a good opportunity to remove any tough sinew that might still be attached. You can carefully trim it with a knife or remove it while shredding the meat later.

Step 10

If this were for adults, you might slice the pork, but since it’s a baby food side dish, it’s best to shred the tenderloin by hand along the grain. This makes it much easier for your baby to chew and digest.

Step 11

Remove the green onion and onion from the pork and quail egg broth. Now, add the shredded pork tenderloin, quail eggs, and diced mushrooms to the pot. If the broth isn’t enough to cover the ingredients, add more filtered water until they are submerged. Stir in the soy sauce and corn syrup, then simmer until the ingredients are well-coated and the sauce has thickened. Taste and adjust seasoning; if it’s too bland for your baby, add a little more soy sauce or corn syrup. It’s important to get the balance of sweet and savory just right.

Once this soy-braised side dish, infused with a beautiful soy glaze, is served on your baby’s tray, it’s guaranteed to be a hit! Little hands will reach for it before the meal even begins.
