Step 1

Step 2

First, prepare the carrot to add color to our rolled omelet. Wash about 1/4 of a carrot, peel it, and then finely grind it in a blender or food processor until it forms a smooth puree. Grinding it finely like a puree will help it mix well with the egg mixture and create a lovely color.

Step 3

Crack 6 eggs into a bowl and separate the whites from the yolks. In the bowl with the egg whites, add the finely pureed carrot, chopped scallions, and torn gamté. Finally, add a pinch of salt and mix everything together well.

Step 4

Gently whisk the mixture to allow the gamté’s aroma to infuse into the egg mixture and to ensure all ingredients are evenly combined without clumps. You can tear the gamté into slightly larger pieces to retain some texture, if desired. Avoid overmixing, as too much air can make the egg mixture too frothy. Mix gently just until the ingredients are well incorporated.

Step 5

Prepare a wide, rectangular frying pan and heat it over very low heat. Pour a thin layer of the egg mixture into the pan. Cook gently over low heat, preparing to roll the omelet.
