This recipe is a ramen-based adaptation of Dan Dan Noodles, personally reinterpreted by Chef Baek Jong-won. Ingredients
  • 3 cups water
  • 1 handful green onions (scallions)
  • 1 packet instant ramen (including dried vegetable packet)
  • 1 Tbsp peanut butter
  • 1 Tbsp red pepper flakes (gochugaru)

Cooking Instructions

Step 1

First, prepare by pouring 3 cups (approximately 600ml) of water into a pot.

Step 2

Wash the green onions thoroughly. Finely chop about a 1-handful portion, focusing on the white parts. Cut them into roughly 5cm lengths.

Step 3

Place the prepared water into the pot and bring it to a boil over high heat.

Step 4

Once the water is at a rolling boil, add the instant ramen noodles and the dried vegetable packet that comes with it. Set aside the soup base packet for later.

Step 5

Cook the noodles until they soften and loosen up, about 2-3 minutes. Be careful not to overcook them.

Step 6

When the noodles are sufficiently cooked, carefully pour out about half of the water from the pot. Too much broth can dilute the flavor.

Step 7

After draining some of the water, return the pot to low heat. Do not turn off the stove; keep it on low heat.

Step 8

Now, add the soup base packet from the ramen to the pot. You can add the dried vegetable packet at this stage as well.

Step 9

Add 1 tablespoon of peanut butter. Stir well with chopsticks or a ladle until the peanut butter is completely dissolved and smooth, ensuring there are no clumps. Properly mixing the peanut butter with the noodle broth is key to developing a deep flavor.

Step 10

As the peanut butter fully incorporates into the broth, you’ll notice the soup slightly thickening. This is the secret to achieving the unique richness of Dan Dan Noodles.

Step 11

Add all the chopped green onions you prepared earlier into the pot. The fragrant aroma of the green onions will enhance the dish.

Step 12

Finally, add 1 tablespoon of red pepper flakes (gochugaru) to give it a spicy kick. Stir gently to combine all the ingredients well.

Step 13
