Ingredients
  • Solid curry blocks 3 pieces (for 4 servings, adjust to taste)
  • Sweet potato (medium) 1
  • Zucchini (1/3)
  • Carrot (small) 1
  • Onion (medium) 1
  • Beef 1 cup
  • Butter 1 piece

Cooking Instructions

Step 1

Prepare all your ingredients by chopping them into bite-sized pieces, similar in size to the beef. I opted for sweet potato for its natural sweetness, but feel free to use other root vegetables if you prefer. In a pan, melt a piece of butter over medium heat. Sauté the chopped onion until it becomes translucent and fragrant, then add the remaining chopped vegetables (sweet potato, zucchini, carrot) and stir-fry them together.

Step 2

Once the vegetables have softened slightly, add the beef to the pan. Continue to stir-fry until the beef is no longer pink and is nicely browned. This step helps to lock in the juices and add depth of flavor.

Step 3

Pour 6 cups of water into the pan with the sautéed ingredients (this is for approximately 4 servings). Bring the water to a boil, then reduce the heat to medium-low and simmer until all the vegetables and beef are tender. Once everything is cooked through, lower the heat and add the solid curry blocks. (Each block typically serves about 1.5 people, so I used 3 blocks for 4 servings. If you prefer a stronger curry flavor, you can add extra curry powder.)

Step 4

Stir the curry blocks gently until they are completely dissolved. Let it simmer for another 3-5 minutes, stirring occasionally, until the curry thickens to your desired consistency. I personally prefer a thicker curry, which is why the sauce might appear less watery. If the curry becomes too thick, you can add a little more water, a tablespoon at a time, until you reach your preferred thickness.

Step 5
