  • 1 Tbsp minced garlic
  • 4 Tbsp water or broth
  • Sesame oil, a drizzle
  • Sesame seeds, a pinch

Crispy Stir-fried Anchovies with Vinegar Drink
  • 200g anchovies (cleaned)
  • 3 Tbsp chili paste (made with chili peppers)
  • 1 Tbsp minced garlic
  • Cooking oil, a little

  • 50g dried anchovies (for broth, cleaned)

  • 1 Tbsp crab soy sauce (or regular soy sauce)
  • 2 Tbsp allulose (or sugar/corn syrup)
  • 1 Tbsp minced garlic
  • 4 Tbsp water used to boil potatoes (or plain water)
  • Cooking oil, a little
  • Sesame oil, a little

Tangy and Spicy Stir-fried Aged Kimchi with Perilla Oil
  • 1/8 aged kimchi (cut into bite-sized pieces)
  • 1 Korea vinegar drink (e.g., ‘Hongcho’) (use the liquid)
  • 1 green chili pepper (optional, finely chopped)
  • Cooking oil, a little
  • Minced garlic, a little
  • Perilla oil, a little
  • Sesame seeds, a pinch

Cooking Instructions

Step 1

Boil the eggs for 6-8 minutes until hard-boiled, using an egg boiler or a pot. Immediately transfer the boiled eggs to cold water to cool them down, then carefully peel off the shells. Gently tap the eggs to help loosen the shells.

Step 2

For the braised eggs, finely chop the onion and green chili pepper. Ensure they are chopped into uniform, small pieces, as larger chunks can affect the texture when cooked.

Step 3

In a bowl, combine the soy sauce, crab soy sauce, allulose, broth (or water), minced garlic, sesame oil, and sesame seeds to make the braising liquid. Add the peeled eggs to the sauce and gently toss to coat. Your delicious braised eggs are ready! You can enjoy them immediately or store them in the refrigerator.

Now, let’s make the stir-fried anchovies with vinegar drink. Lightly coat a pan with cooking oil. Add the minced garlic and cleaned anchovies. Stir-fry over medium-low heat, ensuring the anchovies don’t burn, until they become crispy and their fishy smell dissipates.

Once the anchovies are somewhat toasted, add the chili paste, sesame oil, and sesame seeds. Stir-fry quickly, coating everything evenly. Be careful not to overcook, as the anchovies can become too hard.

Transfer the finished stir-fried anchovies to a serving dish. You’ve now prepared a visually appealing and tasty side dish.

Next, we’ll prepare the braised potatoes and anchovies. Peel the potatoes and cut them into bite-sized cubes. Slice the green chili pepper diagonally and prepare the Korea vinegar drink. (The vinegar drink adds a pleasant tanginess.)

Place the cubed potatoes in a pot and add enough water to cover them. Boil until the potatoes are tender but not mushy. You can reserve the potato-boiling water for the braising liquid.

In another pan, heat a little cooking oil. Add the minced garlic, boiled potatoes, and sliced green chili pepper. Stir-fry until the potatoes are lightly browned; this enhances their flavor.

Once the potatoes are sautéed, add the soy sauce, crab soy sauce, allulose, and the reserved potato-boiling water (or plain water). Mix well. Once the liquid starts to boil, add the cleaned anchovies.

Reduce the heat to low, cover the pan, and let it simmer until the potatoes are fully cooked and the sauce has thickened slightly. Stir occasionally to prevent the potatoes from sticking to the bottom.

When the potatoes are tender and most of the liquid has evaporated, turn off the heat. Stir in the sesame oil and sesame seeds. Your delicious braised potatoes and anchovies are ready.

Finally, let’s make the stir-fried aged kimchi with perilla oil. Rinse the aged kimchi under running water to remove excess salt and then cut it into bite-sized pieces. (If your kimchi is very sour, you can add a little sugar.)

Heat a little cooking oil in a pan. Add the minced garlic, chopped aged kimchi, and green chili pepper. Stir-fry over medium heat until the kimchi is softened and fragrant. Sauté thoroughly to develop its flavors.

Just before turning off the heat, drizzle in the perilla oil and add sesame seeds. Toss lightly to combine. The nutty aroma of the perilla oil complements the kimchi beautifully.
