  • 1/2 tsp ginger powder
  • 1/4 cup water (approx. 50ml)

Cooking Instructions

Step 1

Prepare the semi-dried flatfish, which has been dried to a wonderfully chewy texture. It offers a more satisfying chewiness than fresh flatfish and a richer flavor when cooked.

Step 2

Since the flatfish is already well-prepared, make 3-4 shallow cuts on each side. This will help the sauce penetrate deeply into the fish, enhancing its flavor as it braises.

Step 3

Cut the onion in half and slice it thinly into strips. Slice the chilies diagonally after removing the seeds. If you enjoy a bit of spice, you can use Korean green chilies (cheongyang peppers), but omit them or use regular bell peppers if serving to children.

(8 Tbsp soy sauce, 3 Tbsp vinegar, 4 Tbsp sugar, 4 Tbsp sake, 1 Tbsp minced garlic, 1 Tbsp sesame oil, 1 Tbsp corn syrup, 1/2 tsp ginger powder, 1/4 cup water). Making a larger batch of this versatile teriyaki sauce and storing it in the refrigerator makes it convenient for various dishes. For an even richer flavor, you can simmer the sauce in a pot until it boils, then let it cool before use.
