  • 3 slices of bread (slightly stale bread works well too)
  • 1/2 cup milk (100ml)
  • 2 large eggs (room temperature)
  • 3 tablespoons yuzu marmalade (including the peel pieces)
  • A little butter (for greasing the pan and baking dish)

Cooking Instructions

Step 1

First, prepare your leftover bread. It’s best to cut the bread into bite-sized cubes, about 2-3 cm. If you cut them too small, they might break apart while toasting. Now, heat a pan over medium-low heat. Lightly melt a little butter to grease the pan, then add the bread cubes and toast them until golden brown and crisp. Make sure to flip the bread pieces occasionally to ensure even toasting and prevent burning. This toasting step will add a wonderful texture to your final pudding.

Step 2

Let’s make the custard base for our pudding! In a bowl, combine 1/2 cup of milk and 2 large eggs. Add 3 tablespoons of sweet and fragrant yuzu marmalade. It’s great to include the pieces of yuzu peel as well for extra flavor. Now, using a whisk or a fork, mix all the ingredients thoroughly until well combined. It’s important to whisk until the egg is fully incorporated and there’s no eggy smell, ensuring the yuzu marmalade is smoothly blended with the milk.

Step 3

Now, let’s prepare the oven-safe dish for baking the pudding. Lightly coat the inside of your baking dish with butter; this will help the pudding release cleanly once it’s done. After greasing, fill the dish with the toasted bread cubes, about 80% full. Gently pour the prepared egg mixture evenly over the bread. Let it sit for a moment, allowing the bread to absorb the custard mixture thoroughly for an extra moist pudding. For an even more refreshing taste, you can tuck some extra yuzu marmalade pieces between the bread cubes.

Step 4

It’s time to bake the pudding! Preheat your oven to 190°C (375°F). Place the pudding dish into the preheated oven and bake for approximately 15 minutes. After 15 minutes, check if the pudding is golden brown and set. If you are baking the pudding in one large dish, you’ll have more bread, so it’s recommended to increase the baking time by about 10 minutes, for a total of around 25 minutes. Cooking times may vary slightly depending on your oven. You can perform a skewer test to check for doneness. Once baked, let the pudding cool slightly before enjoying this delightful treat!
