Seasoning Ingredients
- Soy sauce (or Krab Soy Sauce) 1 Tbsp
- Cooking wine (Mirin) 1 Tbsp
- Minced garlic 1 Tbsp
- Korean green chili peppers 4
- Store-bought Galbi sauce 2 Tbsp
- Oyster sauce 2 Tbsp
- Ground black pepper 0.5 Tbsp
- Toasted sesame seeds 1 Tbsp
- Soy sauce (or Krab Soy Sauce) 1 Tbsp
- Cooking wine (Mirin) 1 Tbsp
- Minced garlic 1 Tbsp
- Korean green chili peppers 4
- Store-bought Galbi sauce 2 Tbsp
- Oyster sauce 2 Tbsp
- Ground black pepper 0.5 Tbsp
- Toasted sesame seeds 1 Tbsp
Cooking Instructions
Step 1
Soak the pork back ribs in cold water for about 1 hour to remove any blood. Then, place the ribs in boiling water with 2 bay leaves and a small piece of ginger (optional) and boil for about 20 minutes until tender. This step is crucial for eliminating any gamey odor.
Step 2
Adding 1 Tbsp of minced garlic and 2 bay leaves to the boiling water in step 1 will further help to remove any unwanted smells from the ribs, ensuring a cleaner flavor.
Step 3
Once the ribs are tender, remove them from the boiling water and place them on a sieve or colander to drain thoroughly. Letting them dry completely will help the sauce to adhere better and create a more enjoyable texture.
Step 4
To further enhance the flavor and remove any remaining gamey notes, prepare the ginger by peeling and thinly slicing or mincing it. Slice the 4 Korean green chili peppers diagonally, removing the seeds if you prefer less heat. If you enjoy spiciness, you can leave the seeds in.
Step 5
Heat about 2 Tbsp of canola oil in a large pan over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Then, add the sliced ginger and chili peppers and stir-fry together until aromatic.
Step 6
Add the drained pork back ribs to the pan. Pour in 1 Tbsp of soy sauce, 1 Tbsp of cooking wine, 2 Tbsp of store-bought Galbi sauce, 2 Tbsp of oyster sauce, and 0.5 Tbsp of ground black pepper. Toss everything together to coat the ribs evenly with the seasonings.
Step 7
Continue to stir-fry over medium heat for about 5-7 minutes, allowing the sauce to thicken and coat the ribs beautifully. Keep tossing the ribs to ensure they cook evenly and the sauce doesn’t burn. You can adjust the seasoning to your personal preference. Finally, sprinkle with 1 Tbsp of toasted sesame seeds for a nutty finish. Your delicious pork back rib stir-fry is ready to serve!
