Cantonese Stir-Fried Noodles

Main Ingredients
- 100g Onion, thinly sliced into strips
- 30g Carrot, thinly sliced into strips
- 100g Bean Sprouts, washed and drained
- 100g Napa Cabbage, thinly sliced into strips
- 150g Cooked Noodles (use your favorite type, e.g., Chinese egg noodles, ramen noodles)
Sauce & Seasonings
- 1 Tbsp Vegetable Oil
- 1 Tbsp Chili Oil (adjust to taste)
- 1 Tbsp Minced Garlic
- 1 Tbsp Soy Sauce
- 1 tsp Oyster Sauce
- 1 tsp Sugar
- 1 Tbsp Shaoxing Wine (or cooking wine)
- 1 Tbsp Fermented Vinegar (adds a pleasant tang)
- Pinch of Ground Black Pepper
- A drizzle of Sesame Oil (for finishing)
- 1 Tbsp Vegetable Oil
- 1 Tbsp Chili Oil (adjust to taste)
- 1 Tbsp Minced Garlic
- 1 Tbsp Soy Sauce
- 1 tsp Oyster Sauce
- 1 tsp Sugar
- 1 Tbsp Shaoxing Wine (or cooking wine)
- 1 Tbsp Fermented Vinegar (adds a pleasant tang)
- Pinch of Ground Black Pepper
- A drizzle of Sesame Oil (for finishing)
Cooking Instructions
Step 1
Heat 1 tablespoon of vegetable oil in a wok or a large, deep pan over medium heat. Add 1 tablespoon of minced garlic and stir-fry until fragrant, being careful not to burn it.

Add the thinly sliced onion, carrot, and napa cabbage to the pan. Stir-fry briefly; the key is to keep the vegetables crisp.
Step 3
Pour in 1 tablespoon of Shaoxing wine (or cooking wine) and stir-fry quickly over high heat. The wine helps to remove any unwanted odors from the vegetables and enhances their flavor.
Step 4
Once the vegetables are slightly tender, add 1 tablespoon of soy sauce and 1 teaspoon of oyster sauce. Stir well to combine and coat the vegetables.

Add about half a ladle of broth (or water) to the pan. Once it comes to a boil, add the washed bean sprouts. Stir-fry quickly to ensure the bean sprouts remain crisp and don’t become mushy.

Continue stir-frying until the sauce coats the ingredients nicely. Then, add 1 teaspoon of sugar and stir until dissolved, adding a touch of sweetness.

Add the pre-cooked noodles to the pan. Gently separate the noodles and toss them with the vegetables and sauce until well combined.

Drizzle 1 tablespoon of chili oil around the edges of the pan and stir-fry with the noodles to add a pleasant spicy aroma and flavor.

Season with a pinch of ground black pepper. Just before turning off the heat, add a drizzle of sesame oil for a final fragrant touch. (Optional: you can also add some chopped scallions or chives and stir-fry briefly.)
