How to Make Baked Chicken with Vegetables and Cheese / Chicken Breast Recipe, Oven Baked Chicken, Broccoli, Onion, Cheese, Cheese Chicken Bake
Hello everyone, it’s Superpower! Today, I’ve made a delicious ‘Vegetable Cheese Chicken Bake.’ This dish involves mixing broccoli, onion, lemon, and various sauces, then topping the chicken and baking it. It’s incredibly flavorful and free from any gamey taste. Feel free to substitute the vegetables; you don’t have to stick to just broccoli and onion. Add your favorite vegetables like bell peppers! Let’s get started on how to make this delightful Vegetable Cheese Chicken Bake!
Ingredients
- 1 frozen chicken breast (fresh is also fine)
- 1 head of broccoli (small florets)
- 2 cloves garlic
- 1/4 onion
- 1 lemon (slices optional)
- 1 slice processed cheese
- 50g mozzarella cheese
- Salt to taste
- Pepper to taste
- Olive oil as needed
- 2 Tbsp mayonnaise
- Paprika powder as needed (optional)
Cooking Instructions
Step 1
Prepare one chicken breast. If using frozen, ensure it’s fully thawed.
Step 2
Peel and mince 2 cloves of garlic. Minced garlic will add a wonderful aroma to the dish.
Step 3
Place the chicken breast in a bowl. Add the minced garlic, about 1 tablespoon of olive oil, a pinch of salt, and a pinch of pepper. Mix well to marinate the chicken while you prepare the vegetables. This step helps tenderize the chicken and infuse flavor.
Step 4
Finely dice 1/4 onion. The natural sweetness of the onion will complement the chicken beautifully.
Step 5
Prepare the broccoli by washing it thoroughly. Briefly blanch the florets in boiling water with a pinch of salt for about 30 seconds to 1 minute, then rinse under cold water. Drain well and finely chop. Blanching helps retain a vibrant color and improves texture.
Step 6
Wash the lemon well (using baking soda or coarse salt is recommended). Finely mince the lemon, including the peel (optional, if you prefer a milder lemon flavor, you can omit the peel or just use the juice).
Step 7
Cut 1 slice of processed cheese into small pieces. This will be used as a topping later.
Step 8
In a bowl, combine the minced onion, chopped broccoli, and minced lemon. Add 2 tablespoons of mayonnaise, a pinch of paprika powder (optional), a pinch of pepper, a pinch of salt, and drizzle with about 1-2 tablespoons of olive oil. Mix everything thoroughly to create a flavorful vegetable mixture. Ensure all ingredients are well incorporated.
Step 9
Add 50g of mozzarella cheese to the vegetable mixture and stir to combine. The cheese will add richness and a delightful texture to the topping.
Step 10
Take the marinated chicken breast and either make shallow cuts on it or butterfly it open (slice it horizontally almost all the way through and open it flat). This creates more surface area for the filling and helps the chicken cook evenly.
Step 11
Generously spread the prepared vegetable and cheese mixture onto the flattened chicken breast. Ensure an even layer for maximum flavor in every bite.
Step 12
Arrange the pre-cut processed cheese pieces on top of the vegetable mixture. The cheese will melt and become wonderfully gooey during baking.
Step 13
Line a baking sheet with parchment paper and place the stuffed chicken onto it. Bake in a preheated oven at 200°C (392°F) for approximately 20-25 minutes, or until the chicken is cooked through and the cheese is golden and bubbly. Baking time may vary depending on your oven.
Step 14
Once baked to perfection, transfer the Cheesy Chicken Bake with Vegetables to a serving plate. Sprinkle with a little parsley powder for garnish, if desired. Enjoy your delicious and visually appealing creation!
