Main Ingredients
  • 1 pack Chicken Breast (approx. 200g)
  • 1 block Tofu (approx. 300g)
  • 1 Onion (medium size)
  • 2 Korean Green Chilies

Seasoning
  • 2 Tbsp Doenjang (Korean Soybean Paste)
  • 0.5 Tbsp Sugar
  • 1.5 Tbsp Gochugaru (Korean Chili Flakes)
  • 1 Tbsp Minced Garlic

Cooking Instructions

Step 1

First, prepare the chicken breast. Cut the chicken breast into bite-sized pieces, then place them in a blender and blend until completely smooth. (The original Baek Jong-won recipe uses ground pork, but chicken breast is a great substitute for a lighter, healthier option or during a diet. If using chicken breast, ensure it’s well loosened in cold water to prevent clumping.)

Step 2

Peel the onion, wash it thoroughly, and then thinly slice it into strips. Remove the stems from the Korean green chilies and thinly chop them as well.

Step 3

Lightly rinse the tofu under running water, then cut it into bite-sized cubes, about 1.5cm in size. At this stage, you can also finish loosening the chicken breast in cold water if you haven’t already.

Step 4

In a pot, combine 2 Tbsp Doenjang, 0.5 Tbsp sugar, 1.5 Tbsp Gochugaru, and 1 Tbsp minced garlic. Mix well to create the seasoning paste. The sugar is recommended as it balances the slightly strong taste of Doenjang, adding depth of flavor. After making the paste, add a little of the loosened chicken breast water and start heating it. Once it begins to boil, add the sliced onion and chopped green chilies.

Step 5

Once the onion becomes slightly translucent and softened, carefully add the cubed tofu. Stir gently to coat the tofu with the seasoning without breaking it apart. Continue to simmer over medium-low heat, allowing the flavors to meld. It’s important to cook until the paste thickens and the tofu is well-infused with the seasoning.

Step 6

When all the ingredients are well combined and a delicious aroma fills the air, your Chef Baek’s Tofu Gamjang is ready! Spoon a generous amount over warm rice and mix well for a truly delightful meal. This Gamjang is also excellent as a filling for fried rice or bibimbap.
