- 3 shiitake mushrooms
Cooking Instructions
Step 1
First, gather all the ingredients needed to make this delicious braised quail eggs and ham. It’s straightforward, so just follow along to create a wonderful side dish!
Step 2
Measure and pour 500ml of water into a bowl. This water will form the base of our flavorful braising sauce.
Step 3
Add 1.5 Tbsp of sugar to the water for sweetness. This is the key to making it appealing, especially for children!
Step 4
Add 2 Tbsp of corn syrup (or oligodang) to add gloss and depth of flavor. Combining it with sugar creates a richer sweetness.
Step 5
Pour in 75ml of soy sauce to provide the savory and umami notes. This will season the dish perfectly to be enjoyed with rice.
Step 6
Using a spatula or spoon, stir well until the sugar is dissolved and all ingredients are evenly combined. Your delicious braising sauce is now ready!
Step 7
To remove excess oil from the ham (Spam or similar), rinse it briefly under hot water. This process helps eliminate unnecessary grease, resulting in a cleaner taste.
Step 8
Dice the ham into bite-sized pieces, about 1.5cm cubes. Cutting them too small might cause them to break apart during braising, so aiming for a moderate size is important.
Step 9
Trim the tough stems from the shiitake mushrooms and slice them into pieces similar in size to the ham. The aromatic shiitake mushrooms will significantly enhance the overall flavor of the dish.
Step 10
We’re using 500g of pre-peeled quail eggs. Simply rinse them under running water to clean them before use. Skipping the peeling step makes cooking much more convenient.
Step 11
Place the prepared quail eggs, ham, and shiitake mushrooms into a wide pan. Pour all of the pre-made braising sauce over them. Now, it’s time to braise! Start with the heat on high. Once the sauce begins to boil, reduce the heat to medium and let it simmer gently. To ensure the ingredients absorb the sauce evenly, shake the pan or stir gently with a spatula from time to time.
Step 12
Continue to braise until the sauce has thickened and is almost completely absorbed by the ingredients. It’s crucial to let it simmer long enough for the flavors to meld beautifully. The dish is ready when it develops a glossy sheen.
Step 13
Transfer the finished braised quail eggs and ham to a container. Sprinkle 1 Tbsp of sesame seeds evenly over the top for a beautiful garnish and completion! The chewy texture of the quail eggs, the savory ham, and the tender shiitake mushrooms, all coated in the delicious sauce, make it an incredibly satisfying dish when served over rice. Store any leftovers in the refrigerator and enjoy this wonderful side dish anytime!
