Since rice cakes don’t absorb sauce as quickly, the secret lies in using a flavorful broth base and a rich, delicious sauce. With this recipe, you can easily make tteokbokki at home that rivals store-bought versions, perfect as a hearty meal replacement or a satisfying snack. I’ll guide you step-by-step through this easy-to-follow recipe!
Tteokbokki Ingredients
- 400g chewy rice cake tteokbokki
- 3 sheets of square fish cakes
- 1 stalk of green onion
- 2-3 hard-boiled eggs (optional)
- 500ml water
- 1 piece of solid broth cube (soup stock cube)
Delicious Sauce Ingredients
- 3 Tbsp gochujang (red chili paste)
- 2 Tbsp gochugaru (red chili flakes)
- 2 Tbsp sugar
- 3 Tbsp oligodang (corn syrup)
- 1 Tbsp soy sauce
- 1/2 tsp black pepper powder
- 3 Tbsp gochujang (red chili paste)

Cooking Instructions
Step 1
First, prepare 400g of chewy rice cake tteokbokki. Lightly rinse the rice cakes in cold water; this prevents them from sticking together and ensures cleaner cooking.

This step is for preparing the broth that adds depth to the tteokbokki. While making your own anchovy-kelp broth is ideal, using a store-bought solid broth cube is a very convenient alternative. Add 1 broth cube to 500ml of water and bring it to a boil. This creates a simple yet delicious broth base.
Step 3
While the broth is boiling, cut the fish cakes and green onions into bite-sized pieces. Slicing the fish cakes into triangles or squares and diagonally cutting the green onions makes for a visually appealing dish and helps the flavors meld well.

Once the broth is boiling, add the prepared rice cakes. First, add 2 tablespoons of sugar. Simmering with sugar initially helps the rice cakes absorb a subtle sweetness, making them taste even better.

Now it’s time to add the sauce ingredients that will make the tteokbokki flavorful. Add 3 Tbsp gochujang, 2 Tbsp gochugaru, 3 Tbsp oligodang, 1 Tbsp soy sauce, and 1/2 tsp black pepper powder. (Excluding the sugar added earlier) combine all remaining sauce ingredients. Cook over medium heat, stirring with a spatula for about 10 minutes until the sauce thickens and coats the ingredients nicely.

Finally, add the prepared green onions and fish cakes, and simmer for another 2-3 minutes to finish. If you prefer soft, well-cooked fish cakes, you can add them when you add the sauce. The umami from the fish cakes will enrich the sauce, adding a more complex flavor. However, in my household, we prefer slightly firmer fish cakes, so we add them at the end for just a brief simmer. Adjust the timing of adding the fish cakes according to your preference.
