Essential Ingredients

Cooking Instructions

Step 1

In a large bowl, crack the egg and whisk it together with 1/2 cup of water and 4 tablespoons of cooking oil. Add the glutinous rice donut mix and knead with a spatula or your hands until a cohesive, slightly elastic dough forms. Refer to the donut mix packaging for recommended kneading time.

Step 2

Divide the dough into 6 equal portions. Gently roll each portion into a long rope. Take two ropes and twist them together to form the classic twisted donut shape. You can adjust the tightness of the twist to your preference.

Step 3

Heat a generous amount of cooking oil in a deep pot over medium-high heat to about 170-180°C (340-355°F). Carefully place the twisted doughs into the hot oil. Fry for about 3-4 minutes, turning occasionally, until golden brown and crispy on all sides. Once cooked, remove the twists and place them on a wire rack or paper towels to drain excess oil.

Step 4

To prepare the soybean powder topping, toast 1/2 cup of soybean powder in a dry pan over low heat, stirring constantly, until fragrant and slightly darker. Be careful not to burn it. Once toasted, transfer to a bowl and mix in 2 tablespoons of sugar. This creates a nutty and sweet coating.

For the castella crumble topping, take 1 castella cake and crumble it finely using a sieve or by hand. For a stickier coating that adheres better, you can optionally mix in a very small amount of whipped cream with the castella crumbs. This step is optional.

Step 6

The cinnamon sugar topping is simple: combine 5 tablespoons of sugar with 1 tablespoon of ground cinnamon in a small bowl and mix well until evenly distributed.
