Begin by gently rinsing 260g of fresh shiitake mushrooms under running water. Trim off the tough stems from the bottom of the caps. Then, make shallow cross-shaped cuts (X) on the top of each mushroom cap. This helps the sauce penetrate better, enhancing the flavor.

Prepare the vegetables for the braise. Wash and peel 1 carrot and 450g of daikon radish. Cut them into large, bite-sized pieces, about 4-5mm thick, similar to the thickness of the shiitake mushrooms. Avoid cutting them too thin, as they might break apart during cooking.
