  • 1 Tbsp corn syrup (or rice syrup)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp minced ginger (or a pinch of ginger powder)
  • Minced green onion (for the sauce)
  • 3 dried red chilies (or a small amount of dried chili peppers, adjust for spiciness)
  • 1 Tbsp sesame oil
  • 2 pinches black pepper
  • 200ml water (using broth will add deeper flavor)

Step 1

First, prepare the frying chicken. By blanching the chicken in boiling water for about 2 to 3 minutes, you can effectively remove impurities and any gamey smell. This step is crucial for a clean and refined taste in your Jjimdak.

Rinse the blanched chicken thoroughly under cold running water. Rinsing meticulously helps to remove any residual oil, blood, or impurities from the chicken’s surface, ensuring a clear and clean braising liquid.

In a bowl, combine the oyster sauce, soy sauce, cooking wine, corn syrup, minced garlic, minced ginger, minced green onion, dried red chilies, sesame oil, black pepper, and water.
