Main Ingredients
  • 2 large chicken breasts
  • 1 piece of radish (about 200g)

Broth Ingredients
  • 1 stalk of green onion
  • 1/4 onion

Seasoning and Garnish
  • 1/2 Tbsp minced garlic
  • 1 Tbsp soy sauce for soup (guk-ganjang)
  • Pinch of salt
  • Pinch of black pepper
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

Slice the radish thinly, about 2-3mm thick. Since chicken breast cooks quickly, slicing the radish thinly ensures it cooks evenly with the chicken.

Step 2

Place the sliced radish and the whole, washed chicken breasts into a large pot. Cooking the chicken breast whole adds more depth to the broth.

Step 3

Add the green onion, onion, and 500ml of water to the pot. Ensure there’s enough water to cover the chicken and radish.

Step 4

Start boiling over high heat. Once the water comes to a rolling boil, skim off all the foam that rises to the surface. This step is crucial for a clear and clean-tasting broth.

Step 5

Once the green onion and onion become translucent and have infused their flavor, remove and discard them. Let the chicken breast cool slightly as it will be very hot, then shred it into bite-sized pieces along the grain. Allowing it to cool prevents burns.

Step 6

Season the shredded chicken breast with a pinch of salt and pepper. Pre-seasoning the chicken enhances its natural flavor.

Step 7

If the broth has reduced too much, add a little more water. Check if the radish is tender, and adjust the seasoning with salt or soy sauce for soup (guk-ganjang). It’s best to start with guk-ganjang and then add salt if needed.

Step 8

Simmer until the radish is fully cooked and no longer crunchy; your soup is ready! Stir in 1 tablespoon of sesame oil at the end for an extra layer of nutty flavor. This soup is delicious served with a warm bowl of rice!
