How to Make Delicious Chive and Shrimp Pancakes on a Rainy Day
It’s raining again today, just like yesterday! A savory pancake is a must-have on a rainy day. I picked some chives that are growing beautifully in my yard and made some pancakes. I also added some leftover shrimp from the freezer, and the chewy texture of the shrimp was wonderful! The satisfying crunch of the shrimp in this chive and shrimp pancake is perfect for a rainy day. I made two large pancakes and had them for lunch!
Ingredients
- 1.5 cups pancake mix
- 150g shrimp (thawed if frozen)
- 60g chives
- 1 egg
- 1/2 tsp salt
- Vegetable oil for frying
Cooking Instructions
Step 1
First, take out the shrimp from the freezer to thaw. If you have chives growing, pick and wash about 60g of fresh chives.
Step 2
If using frozen shrimp, it’s best to briefly blanch them in boiling water before cooking to ensure they cook through. For the batter, aim for a consistency similar to pancake batter by gradually adding water to the pancake mix. You want a batter that flows smoothly off a spoon but isn’t too thin. Add the chopped chives and 1 egg to the batter. I’m adding 1/2 teaspoon of salt for seasoning, as I plan to eat them without a dipping sauce.
Step 3
Heat a generous amount of vegetable oil in a pan over medium heat. For convenience, spread the batter evenly across the pan to make one large pancake. Arrange the prepared shrimp on top of the batter.
Step 4
For the second pancake, I used all the remaining shrimp. Although I considered making smaller ones, I opted for a larger pancake to save time and effort.
Step 5
The second pancake is generously topped with shrimp, making it look even more appealing. The abundance of shrimp really enhances the flavor!
Step 6
This pancake features the aromatic chives and delightful shrimp. It’s especially delicious when made with fresh, in-season chives. Feel free to substitute shrimp with squid or other seafood for a different twist. Crispy, savory pancakes like these are the perfect treat for a rainy day!
