Ingredients
- 1kg fresh mussels
- 200ml dry white wine
- 200ml heavy cream
- 1/2 onion, finely chopped
- 4 cloves garlic, thinly sliced or minced
- 2 Tbsp unsalted butter
- 1 Tbsp olive oil
- 1 tsp salt (or to taste)
- 1/2 cup fresh parsley, finely chopped
Cooking Instructions

Heat the olive oil in a large pot or Dutch oven over medium-low heat. Add the finely chopped onion and sauté until softened and lightly golden brown, about 5-7 minutes. This slow sautéing will bring out the natural sweetness of the onion. Add the minced garlic and cook for another minute until fragrant.

Pour in the dry white wine and bring to a simmer. Let it cook for 1-2 minutes to allow the alcohol to evaporate, concentrating the wine’s flavor. Then, pour in the heavy cream and stir to combine.

Season with salt, starting with 1 teaspoon, but be sure to taste first as mussels are naturally salty. Adjust seasoning as needed; if it’s too salty, you can add a splash of water or more cream.
