Cooking Instructions

Step 1

Hello everyone! Today, I’ll guide you through an easy and detailed recipe for So-gogi Mu-guk, a clear and refreshing soup that’s perfect for chilly days. It’s a dish anyone can make deliciously at home.

Step 2

First, in a pot, add the beef and perilla oil. Stir-fry over medium heat until the beef is lightly browned. Searing the beef well will give the soup a deeper, richer flavor.

Step 3

Once the beef is somewhat cooked, add the sliced Korean radish and stir-fry together. Lightly coating the radish with perilla oil as it cooks helps bring out its natural sweetness and prevents the soup from becoming cloudy. Now, pour in the 600ml of prepared broth.

Step 4

Dried kelp is a secret ingredient that makes the soup extra refreshing and clear. Add the kelp to the pot with the sautéed beef and radish and let it simmer. Be sure to remove the kelp once the broth has infused its flavor; leaving it in too long can make the soup cloudy.

Step 5

Now it’s time to season the soup. Add 2 teaspoons of soup soy sauce and 2 teaspoons of salt, then taste. Adjust the seasoning with more salt or soup soy sauce according to your preference. It’s best to start with less seasoning and build up to your desired taste.

Step 6

Add 1 teaspoon of minced garlic and a pinch of black pepper for aroma. Cover the pot and let it simmer gently over medium-low heat until all the ingredients meld together beautifully. Simmer for about 15-20 minutes, or until the radish becomes translucent and tender. This will make the soup wonderfully refreshing.

Step 7

During the simmering process, gently skim off any foam or excess oil that rises to the surface with a spoon. This step is crucial for achieving a clear, clean-tasting, and visually appealing soup.

Step 8

Finally, add a generous amount of chopped green onions and simmer for another minute. Your delicious and refreshing beef and radish soup is now ready! Enjoy it with a warm bowl of rice.
