Radish Wraps Main Ingredients
  • Radish wrappers, appropriate amount (store-bought)
  • Imitation crab sticks (kani) 4 sticks
  • Tofu 1 block (approx. 300g)
  • Red bell pepper 1/4
  • King oyster mushroom 1/2
  • Cucumber 1/2
  • Sprouts (radish or similar) 1/2 pack
  • Spinach stems (for tying wraps) a little
  • Salt, a pinch
  • Cooking oil, a little

  • Mustard sauce 2 Tbsp
  • Prepared mustard 1/3 Tbsp
  • Salt, a pinch
  • Vinegar 1 Tbsp
  • Lemon juice 1 Tbsp
  • Water 1 Tbsp

Cooking Instructions

Step 1

First, prepare the filling ingredients for your radish wraps. Slice the king oyster mushroom, red bell pepper, and cucumber into strips slightly shorter than the width of your radish wrappers, about 0.7-1 cm thick. Cut the tofu into approximately 1 cm thick slices. Lightly sprinkle salt on both sides of the tofu slices to season. Rinse the sprouts under cold running water, soak them briefly in cold water, and then drain well to ensure they are fresh and crisp.

Step 2

Next, prepare the spinach stems that will be used to tie the wraps. Bring a pot of water to a boil and add a pinch of salt. Blanch the spinach stems for about 15-20 seconds; be careful not to overcook them as they can become mushy. Immediately rinse the blanched spinach stems in cold water to cool them down, then gently squeeze out excess water. Trim them to a suitable length for tying.

Step 3

Let’s add flavor by lightly pan-frying the tofu and king oyster mushrooms. Lightly grease a pan with cooking oil and fry the tofu slices over medium-low heat until golden brown on both sides. Place the fried tofu on paper towels to absorb excess oil and let it cool. Lightly grill the king oyster mushrooms in the same pan, sprinkling a pinch of salt for seasoning.

Avoid overfilling, as it can make the wraps difficult to roll and prone to breaking.

Step 7

Starting from one edge, carefully and firmly roll up the radish wrapper with the filling. Use a prepared spinach stem to gently tie the wrap and secure its shape. For a neat presentation, tie the knot on the underside of the wrap so it’s hidden when served.
