Main Ingredients
  • 1/2 Carrot
  • 2 stalks Green Onion (white parts)
  • 2 King Oyster Mushrooms
  • 1/2 Eggplant
  • 1 Plant-based Patty (optional)

Seasoning & Others
  • 2 pinches Salt (approx. 1/4 tsp)
  • 1 Tbsp Cooking Oil (or Olive Oil)

Cooking Instructions

Step 1

First, cut the white parts of the green onions into convenient lengths, about 5-7 cm. Ensure they are not too short, or they might slip off the skewer.

Step 2

Cut the carrot into similar lengths and thickness as the green onions. For a better bite, cut them slightly thicker rather than thinly julienned. Aim for about 5-7 cm in length.

Step 3

Slice the king oyster mushrooms slightly longer and thicker than the green onions. Although they might be quartered in the photo, mushrooms shrink significantly when cooked. Cut them thicker and longer than they appear to maintain a good shape. Slice them about 1.5 cm thick.

Step 4

Cut the eggplant into lengths similar to the green onions (about 5-7 cm). Try not to cut them too thinly, or they might break apart.

Step 5

The plant-based patty is optional. If you’re using it, cut it to a length similar to the green onions. The patty adds a nice chewy texture. (Can be omitted)

Step 6

Now, prepare to assemble the skewers. Lightly season the vegetables (carrot, green onion, king oyster mushroom, eggplant) – excluding the plant-based patty – with a small pinch of salt (about 2 pinches). This enhances the vegetables’ natural sweetness and balances the flavor.

Step 7

Thread the prepared ingredients onto skewers in your desired order. Arranging them by color or preference will make the skewers visually appealing and more appetizing. A colorful presentation makes the dish even more delightful.

Step 8

Brush the assembled skewers evenly with cooking oil (or olive oil). This step helps achieve a crispier texture and a beautiful golden-brown color when cooked. Preheat your air fryer to 160°C (320°F). Place the skewers inside and cook for 15 to 20 minutes. Flipping them halfway through ensures even cooking. If using an oven, cook at the same temperature and for the same duration.
