Super Easy Way to Make Plain Rice Porridge (Juk)
When you have a poor appetite, or are suffering from stomach issues like gastritis or enteritis, plain rice porridge (juk) is a must-have. It’s also the go-to comfort food when your stomach feels bloated. While many specialized porridge shops offer various types, this recipe introduces how to easily make plain white porridge at home. It’s incredibly simple and quick to prepare, perfect for when you need a soothing meal.
Plain Rice Porridge Ingredients
- 400ml Water or Beef Bone Broth (Using warm water or bone broth adds a deeper flavor)
- 4 Tbsp Soaked Rice (Soaking the rice for over 30 minutes makes the grains wonderfully soft)
- 1 tsp Salt or Soy Sauce (Adjust seasoning to your taste)
- A little Perilla Oil or Sesame Oil (Optional, for added aroma)
Cooking Instructions
Step 1
First, prepare the rice. Rinse 4 tablespoons of dry rice thoroughly and soak it in cold water for at least 10 minutes, or preferably for about 30 minutes. Soaking the rice helps the grains to soften and break down beautifully, resulting in a much smoother and more delicious porridge.
Step 2
Pour 400ml of water or beef bone broth into a deep pot. Using beef bone broth will give your plain porridge a richer, more savory depth of flavor compared to just using water. If you’re using plain water, opt for warm water over cold, as it helps the rice grains cook evenly without clumping.
Step 3
Add the soaked rice (4 tablespoons) to the pot. After adding the rice, it’s crucial to stir well to prevent the grains from sticking to the bottom of the pot.
Step 4
Once the rice and liquid are combined, give it a stir and then bring it to a simmer over medium-low heat. Continuously stir the porridge with a chopstick or ladle to prevent the rice from sticking to the bottom and ensure the grains cook down until they are tender and broken. Cook for about 15 to 20 minutes, or until the rice grains have softened and the liquid has thickened to a porridge consistency. This will result in a delicious bowl of white porridge.
Step 5
Transfer the finished porridge to a bowl. Season with a little salt or soy sauce to your preference. Finally, drizzle a drop or two of perilla oil or sesame oil and sprinkle with a little sesame seeds for extra flavor and aroma.
