Main Ingredients
  • 30g medium anchovies (gutted)
  • 1/4 yellow bell pepper
  • 1/4 red bell pepper
  • 1 handful walnuts (approx. 30g)

Seasoning
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp ssamjang (Korean soybean paste)
  • 2 Tbsp honey
  • 2 Tbsp olive oil
  • 1 Tbsp chopped walnuts

Cooking Instructions

Step 1

First, prepare the anchovies. For medium anchovies, remove the fins and the hard head parts. Gently split the belly and carefully remove the internal organs. This step helps reduce any bitterness, making the dish more palatable.

Step 2

Place the gutted anchovies in a dry, unheated pan. Stir-fry them over medium heat for about 2-3 minutes. Lightly toasting the anchovies helps to remove any fishy smell and makes them crispier, ideal for stir-frying. Be careful not to burn them.

Step 3

Quarter the walnuts for bite-sized pieces. Remove the seeds from the yellow and red bell peppers, then chop them into roughly 1.5cm square pieces. The bell peppers add vibrant color and a pleasant crunch to the dish.

Step 4

In a small bowl, combine 2 Tbsp gochugaru, 1 Tbsp ssamjang, 2 Tbsp honey, and 2 Tbsp olive oil. Mix well with a spoon to create the seasoning sauce. The ssamjang adds depth and savory flavor, while the honey provides a mild sweetness and a glossy finish.

Step 5

Return the lightly toasted anchovies to the pan. Pour the prepared seasoning sauce over the anchovies. Gently mix with a spatula to ensure the anchovies are evenly coated with the sauce. Stir-fry over low heat to prevent the sauce from burning and allow it to seep into the anchovies.

Step 6

Once the anchovies have absorbed some of the sauce, add the chopped bell peppers and walnuts. Stir-fry together for about 1-2 minutes over medium-low heat, allowing the ingredients to meld. The key is to not overcook the bell peppers, preserving their crisp texture.

Step 7

Finally, add the 1 Tbsp of chopped walnuts and mix everything thoroughly for the last time. Your delicious anchovy stir-fry is ready! Adding chopped walnuts enhances the textural variety and boosts the nutty flavor. Serve it over warm rice for a delightful meal.
