Ingredients
- 250g fresh chives
- 2 cups soy sauce
- 2 cups vinegar
- 2 cups sugar
- 1 cup water
Cooking Instructions
Step 1
First, let’s make the pickling brine. In a pot, combine 2 cups of soy sauce, 2 cups of vinegar, and 1 cup of water. Add 2 cups of sugar. Stir well over medium-low heat until the sugar is completely dissolved. Boiling the mixture briefly helps dissolve the sugar faster and sterilizes it.
Step 2
Next, prepare the chives. Wash the chives thoroughly under running water to remove any dirt or debris. Pat them dry with paper towels or let them air dry in a colander. Ensure they are as dry as possible before pickling. (I used leftover chives from making chive pancakes, and they turned out wonderfully fresh!).
Step 3
Now, it’s time for the first stage of pickling. Pour the prepared brine evenly over the chives in an airtight container. Make sure the chives are fully submerged in the brine. If they float, you can use a clean, heavy object like a washed stone or a small plate to weigh them down. Refrigerate for 2 days to let the flavors meld.
Step 4
After the first 2 days of refrigeration, gently flip the chives. This ensures that the brine penetrates the chives evenly, leading to a more delicious pickle. Let them continue to pickle for one more day. This completes the 3-day pickling process.
Step 5
Finally, your delicious chives pickles are ready! Serve them as a refreshing side dish. The tangy and slightly sweet flavor, combined with the fresh aroma of chives, makes them a fantastic accompaniment to almost any meal, especially rich, fatty meat dishes and hot rice. Enjoy!
Step 6
Bonus Tip: Don’t discard the leftover brine! You can reuse it to pickle other vegetables or use it as a zesty salad dressing. Enjoy your pickles! ^^
