Main Ingredients
- 300g fresh bean sprouts
- 25g scallions or the white parts of green onions
Seasoning Ingredients
- 1 tsp sea salt
- 2 Tbsp sesame oil
- 1 Tbsp sesame seeds
- 2/3 cup water
- 1 Tbsp cooking oil (e.g., canola oil)
- 1/2 Tbsp minced garlic
- 1 tsp sea salt
- 2 Tbsp sesame oil
- 1 Tbsp sesame seeds
- 2/3 cup water
- 1 Tbsp cooking oil (e.g., canola oil)
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
Gently rinse the fresh bean sprouts under running water two to three times. Carefully pick out and discard any damaged heads, loose skins, or impurities. Using only clean, fresh bean sprouts will result in a delicious stir-fry.
Step 2
After rinsing, drain the bean sprouts thoroughly in a colander. Excess water can make the bean sprouts mushy when stir-fried, so lightly patting them dry with paper towels can help maintain their crispness.
Step 3
Wash the scallions (or the white parts of green onions) and finely chop them into approximately 0.5 cm pieces. Chopping them too thickly may prevent the seasonings from being absorbed well, so thinner slices are recommended.
Step 4
In a deep skillet, combine the cooking oil, water, and salt. Bring to a boil over high heat. Once the water is boiling, add the bean sprouts and immediately cover the pan with a lid. Let the bean sprouts steam for about 3 minutes with the lid on. This method helps cook the bean sprouts through while preserving their delightful crunch.
Step 5
After 3 minutes, lift the lid to check if the bean sprouts are cooked to your liking. Add the minced garlic and chopped scallions. Finally, drizzle in the sesame oil and quickly stir-fry everything together until well combined. Avoid overcooking, as this will make the bean sprouts soft; stir-frying over high heat is key.
Step 6
Sprinkle generously with sesame seeds for a nutty aroma, then immediately turn off the heat. Adding sesame seeds at the end preserves their fragrance, as their aroma can dissipate if cooked for too long.
Step 7
Transfer the finished stir-fried bean sprouts to a serving dish. This makes a wonderful side dish to accompany your warm rice. Enjoy your delicious meal!
